Ingredients

For the Fritters
  • 3 cups zucchini shredded and squeezed very dry
  • 1 cup shredded sharp cheddar cheese freshly shredded
  • 2 large eggs
  • 1/3 cup all-purpose flour
  • 3 green onions thinly sliced
  • 2 cloves garlic minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp oil for pan-frying
For Serving
  • 1/2 cup sour cream

Equipment

  • Box grater
  • Clean kitchen towel
  • Large skillet
  • Spatula

Method

  1. Shred the zucchini using a box grater, then place it in a clean kitchen towel and squeeze out as much liquid as possible until the zucchini feels dry.
  2. In a large bowl, combine the squeezed zucchini, shredded cheddar, eggs, flour, sliced green onions, minced garlic, salt, and pepper. Stir until evenly combined.
  3. Heat a thin layer of oil in a large skillet over medium-high heat until shimmering.
  4. Scoop about ¼ cup of the zucchini mixture per fritter into the pan.
  5. Press each fritter down slightly with a spatula to flatten into an even round patty.
  6. Cook for 3-4 minutes per side until deeply golden brown and crispy on the outside.
  7. Transfer the cooked fritters to a paper towel-lined plate to drain.
  8. Repeat with the remaining batter, adding more oil between batches as needed.
  9. Serve warm with a generous dollop of sour cream and extra sliced green onions on top.

Notes

Squeezing the zucchini completely dry is the most important step for crispy fritters. Cook in batches and don't overcrowd the pan.
