Ingredients

For the Hot Honey Ground Beef
  • 1.5 lbs ground beef 80/20 for the crispiest result
  • 1 tbsp taco seasoning store-bought or homemade
  • 3 tbsp hot honey Mike's Hot Honey or similar — plus more for drizzling
For the Roasted Sweet Potato
  • 2 medium sweet potatoes peeled and cubed into 1-inch pieces
  • 1 tbsp olive oil
  • 1/2 tsp salt
For the Bowls
  • 2 cups cottage cheese full-fat, about ½ cup per bowl
  • 2 ripe avocados sliced fresh before serving
  • 1 tsp flaky sea salt for finishing

Equipment

  • Large skillet
  • Parchment-lined baking sheet
  • Wide serving bowls

Method

  1. Preheat the oven to 425°F. Toss sweet potato cubes with olive oil, salt, and pepper. Spread in a single layer on a baking sheet and roast for 20-25 minutes, flipping halfway, until golden and caramelized.
  2. Heat a large skillet over medium-high heat. Add the ground beef and cook without stirring for 3-4 minutes until deeply browned on the bottom.
  3. Break the beef apart and cook for another 3-4 minutes until fully cooked through and golden throughout. Drain excess fat.
  4. Add taco seasoning and a splash of water. Stir and cook for 1-2 minutes until the seasoning coats the beef.
  5. Remove from heat and drizzle hot honey over the beef. Stir to coat every piece in the sticky glaze.
  6. Build the bowls: divide roasted sweet potato between bowls, add a scoop of cottage cheese, arrange sliced avocado, and pile the hot honey beef in the center.
  7. Drizzle with extra hot honey, add a pinch of flaky sea salt, and serve immediately.

Notes

Don't stir the beef constantly — let it sit and develop crispy golden edges before breaking up. Add hot honey off the heat to prevent burning. Roast sweet potatoes with space between cubes for caramelized edges, not steamed. Add avocado fresh right before serving.
