Method
- In a bowl, whisk together honey, soy sauce, minced garlic, ketchup, rice vinegar, and black pepper.
- Place the chicken thighs in the bottom of the slow cooker.
- Pour the honey garlic sauce over the chicken, making sure all pieces are coated.
- Cover and cook on low for 6 hours or high for 3-4 hours, until the chicken is cooked through and tender.
- Remove the chicken thighs and set aside on a plate.
- Pour the cooking liquid into a small saucepan and bring to a simmer over medium heat.
- Mix the cornstarch with cold water in a small bowl, then stir the slurry into the simmering sauce.
- Cook for 2-3 minutes, stirring constantly, until the sauce thickens into a glossy glaze.
- Return the chicken to the slow cooker and spoon the thickened sauce over the top.
- Serve over steamed rice or noodles with extra sauce spooned over the top.
Notes
For extra sticky glaze, broil the sauced chicken thighs on a baking sheet for 3-4 minutes after slow cooking. Don't skip the cornstarch step — it makes the sauce perfectly glossy.
