Ingredients

For the Graham Cracker Crust
  • 1.5 cups crushed graham crackers about 10-12 full sheets
  • 5 tbsp unsalted butter melted
  • 2 tbsp granulated sugar
For the Brownie Layer
  • 1/2 cup unsalted butter melted
  • 4 oz dark or semi-sweet chocolate chopped
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 3/4 cup all-purpose flour
  • 1 tbsp unsweetened cocoa powder
  • 1/4 tsp salt
For the Marshmallow Topping
  • 3 cups mini marshmallows

Equipment

  • 9x13 baking pan
  • Parchment paper
  • Microwave-safe bowl
  • Whisk
  • Spatula

Method

  1. Preheat the oven to 350°F and line a 9x13 baking pan with parchment paper, leaving an overhang on two sides.
  2. In a bowl, combine the crushed graham crackers, melted butter, and sugar. Stir until it looks like wet sand.
  3. Press the graham cracker mixture firmly and evenly into the bottom of the prepared pan.
  4. Bake the crust for 8 minutes until lightly golden and set. Remove and let cool slightly.
  5. Melt the butter and chopped chocolate together in a large microwave-safe bowl in 30-second increments, stirring between each, until smooth.
  6. Whisk the sugar into the melted chocolate mixture until combined.
  7. Add the eggs and vanilla extract and whisk until the batter is smooth and glossy.
  8. Fold in the flour, cocoa powder, and salt until just combined — don't overmix.
  9. Pour the brownie batter evenly over the pre-baked graham cracker crust.
  10. Bake for 20-22 minutes until the edges are set and the center looks just slightly underdone.
  11. Remove from the oven and immediately cover the entire top with mini marshmallows.
  12. Return to the oven for 3-4 minutes, or switch to broil and watch carefully for 60-90 seconds, until the marshmallows are golden and toasted.
  13. Let cool completely, then refrigerate for 30 minutes before lifting out and slicing into bars.

Notes

Pull the brownie layer out slightly underdone — the marshmallow step adds more heat. Watch marshmallows under the broiler every second. Refrigerate before slicing for the cleanest bars.
