Ingredients

Ingredients
  • 3 oz deli turkey breast sliced thin, rolled into pinwheels
  • 3 tbsp hummus classic or roasted garlic
  • 1/2 Persian cucumber sliced into thin rounds
  • 6 cherry tomatoes halved
  • 1 oz sharp cheddar or mozzarella cut into small cubes
  • 8 whole grain crackers added just before eating to stay crispy
  • 1 tsp olive oil for drizzling over hummus
  • 1 pinch smoked paprika for topping the hummus

Equipment

  • Divided bento box container
  • Small knife and cutting board

Method

  1. Slice the cucumber into thin rounds and halve the cherry tomatoes. Pat dry with a paper towel.
  2. Cut the cheese into small cubes.
  3. Roll the turkey slices into pinwheels or fold into quarters.
  4. Scoop the hummus into one compartment of the bento box and drizzle with olive oil and smoked paprika.
  5. Arrange the turkey pinwheels in the largest compartment.
  6. Fill the remaining compartments with cucumber slices, cherry tomatoes, and cheese cubes.
  7. Add crackers just before eating so they stay crispy.
  8. Seal the box and refrigerate until ready to eat — best within 24 hours.

Notes

Keep hummus in a sealed compartment away from crackers to prevent sogginess. Pat vegetables dry before adding. Add crackers fresh the morning of for the best crunch.
