Ingredients

For the Kabobs
  • 1 cup strawberries hulled and halved
  • 1 cup cantaloupe or mandarin orange segments cut into bite-sized pieces
  • 1 cup pineapple chunks fresh or canned
  • 1 cup kiwi slices or green grapes peeled and sliced if using kiwi
  • 1 cup blueberries
  • 1 cup red grapes or blackberries
  • 12 wooden skewers tips trimmed for kids
For the Marshmallow Dip
  • 8 oz cream cheese softened to room temperature
  • 1 cup marshmallow fluff
  • 1 tsp vanilla extract

Equipment

  • Wooden skewers
  • Mixing bowl
  • Hand mixer
  • Serving platter

Method

  1. Wash and dry all the fruit thoroughly, then cut into bite-sized pieces roughly the same size.
  2. Thread the fruit onto skewers in rainbow color order — strawberries, cantaloupe or oranges, pineapple, kiwi or green grapes, blueberries, and red grapes or blackberries.
  3. Lay the finished kabobs on a platter and refrigerate while you make the dip.
  4. In a mixing bowl, beat the softened cream cheese with a hand mixer until smooth and fluffy, about 1-2 minutes.
  5. Add the marshmallow fluff and vanilla extract and beat again until fully combined and light in texture.
  6. Transfer the dip to a serving bowl and place it in the center of the fruit kabob platter.
  7. Serve immediately or cover and refrigerate until ready to serve.

Notes

Trim the sharp tips off wooden skewers when serving to young children. Pat fruit dry before threading to keep skewers from getting slippery.
