Ingredients

For the Salad
  • 5 cups seedless watermelon cut into bite-sized cubes
  • 2 Persian cucumbers diced
  • 1/4 red onion thinly sliced
  • 1/2 cup feta cheese crumbled from a block
  • 1/4 cup fresh mint leaves torn by hand
For the Honey Lime Dressing
  • 2 tbsp fresh lime juice about 1 lime
  • 1 tbsp honey
  • 1 pinch salt

Equipment

  • Large bowl
  • Small bowl for dressing
  • Whisk

Method

  1. Cut the watermelon into even bite-sized cubes and place in a large bowl.
  2. Dice the Persian cucumbers into similar-sized pieces and add to the bowl.
  3. Thinly slice the red onion and add to the bowl.
  4. In a small bowl, whisk together the fresh lime juice, honey, and a pinch of salt.
  5. Drizzle the dressing over the watermelon and cucumber and toss very gently to coat.
  6. Add the crumbled feta and torn fresh mint leaves and fold in gently.
  7. Taste and adjust with more lime juice or honey as needed.
  8. Serve immediately or refrigerate for up to 20 minutes before serving.

Notes

Add feta and mint right before serving to keep them fresh. Serve within 30 minutes of dressing — watermelon releases juice quickly. Chill the watermelon and cucumber beforehand for the most refreshing result.
